Fit And Healthy With Mango And Tuna

This flavorful recipe makes for a good change from plain old canned tuna. I eat this for lunch or dinner. Good for low carb diet, it is high in protein with a modest amount of carbs.

Grocery bag:
¾ cup mango, peeled and diced
½ cup canned black beans
2 jalapena peppers, seeded and minced
½ cup red onion, diced
½ cilantro, chopped
½ cup lime juice
¼ cup olive oil
Four 6-oz tuna steaks
¼ cup garlic, minced
Salt and pepper to taste

Directions:
For salsa, toss mango, beans, peppers, onion, cilantro,lime juice and olive oil in a bowl and mix together. Leave covered at room temperature.
Rub each tuna steak with garlic and season with salt and pepper. Spritz each side of tuna steaks with cooking spray to prevent sticking.
Grill for 5-6 minutes per side. Top each steak with ¼ cup of salsa.
Serves four.

292 calories, 22g of protein, 9 g of fat,
7 g of carbs
